This chicken fry is made with Brahmi leaves.
I had not seen or heard of it before until Manzi
made this yummy chicken fry using brahmi leaves. Brahmi leaves generally grows in tropical swampy areas.They are supposed to be highly nutritious. My mother in law also makes chutney from it. Well am posting a pic of the leaves so that it becomes easier to recognize for those who want to try this recipe.
And here goes the Brahmi Chicken fry:
Chicken – 1 kg
Brahmi leaves – 20-30
Green chillies – 5-6
Coriander leaves – 1 small bunch
Tamarind juice – 1 tsp
Oil – 3 tbsp
Whole Garam masala (cinnamon – 1 inch, cloves- 4, bay leaf - 2)
Onion – 1 medium julienned
Curry Leaves – 1 sprig
Ginger garlic paste – 1 tbsp
Turmeric powder – ½ tsp
Coriander powder – 1 tsp
Garam masala powder – ½ tsp
Yogurt – 3 tbsp
Water- as needed
In a mixer add Brahmi leaves, green chillies, coriander leaves and tamarind and grind into a fine paste.
Now heat oil in a pan and add whole garam masala and let it splutter. Add curry leaves and onion and saute till onions turn golden brown. Add ginger garlic paste and saute it for half a min. Then add the green paste which was made above. Fry it well till oil separates. Add turmeric powder, coriander powder and garam masala powder. Give it a mix. Add chicken and fry it well for another 3 -5 mins. Add salt and little water. Check the seasoning. Cover and cook till done.
Add yogurt and cook for another 5 mins on medium flame. Let all the extra water evaporate and you should be able to see the oil on top. Serve hot.
ü The amount of oil, salt and spices can be varied according to your taste and eating habits. This measurement works well for me and my family.
