Palak/spinach – 4 bunches
Paneer- 150 gms
Green chillies – 2
Onion- 1- finely chopped
Cumin seeds– ½ tsp
Garlic- 8-10 cloves chopped
Turmeric powder – ½ tsp
Coriander powder – ¾ tsp
Garam masala powder – ¼ tsp
Oil – 4t sp
Fresh Cream – 4 tbsp
Sugar – 1 tsp
Salt
Water as needed
Method
Wash the spinach and remove the stems of it. Blanch it in a pot of hot boiling water. Add one tsp of sugar and salt each. Sugar is added mainly to retain the colour of spinach. Let it simmer for about 2-3 mins and then remove. Grind it into a smooth paste along with green chillies.
Meanwhile put paneer in hot water and let it become soft. Cover it and keep it aside.
Take a pan and heat oil. Add cumin and let it splutter. Add garlic and saute it. Add onion and saute till it turns golden brown. Add turmeric powder, coriander powder, and garam masala powder. Add salt and check for seasoning. Add Spinach Puree. Cook for a few mins till the raw smell disappears. Do not overcook or the taste and colour both will change. Make sure you retain the bright green colour. Add Paneer cubes.and give it a mix. Finally add fresh cream. Mix it and take off the heat. You can serve it with Naan, rotis or ghee rice. I had it with ghee rice and it was yummyJ
