Bharwa Bhindi / Stuffed Lady Finger

Bhindi has always been my favourite vegetable since childhood. I remember that it was easier for mom to make me eat bhindi than any other vegetable when i was a kid. I love bhindi in all forms and especially the stuffed ones. Mom used to make this often at home. This time when i went to super market and saw the fresh lady fingers i just knew what i wanted to make.
Ingredients
Bhindi/lady's finger - ¼ kg
Bhindi/lady's finger - ¼ kg
Red chilli powder – 1 tbsp
Coriander powder – 1 tbsp
Cumin powder – 1 tbsp
Garam masala powder – ½ tbsp
Amchur/Dry mango powder – ½ tbsp
Turmeric powder – 1 tsp
Salt
Oil – 2 tbsp
Cumin seeds – ½ tsp
Onion – 1 medium chopped
Method
Wash the bhindi and pat dry with a
towel. Make incision along the length of the bhindi. Do not split it
completely. Keep it aside.
In a bowl add red chilli powder,
coriander powder, cumin powder, garam masala powder, amchur powder, turmeric
powder and salt. Mix it well. Stuff this mixture into bhindi.
Take a non-stick pan and heat oil.
Add cumin seeds and allow it to splutter. Add onion and saute till it turns
pink. Add stuffed bhindi and give it a mix. Cover and cook for 5 mins. Uncover
the lid and flip the bhindi and cover and cook till done.
