Well i was so bored eating vegetarian from past so many days and wanted to eat something spicy and obviously non-vegetarian. Although i do agree vegetarian also has too many options and i do prefer eating veg most of the days. But non-veg is something everyone in the family loves and is a must at least twice in a week. It had been quite some time since i made this yummy chicken pulav for my family. And i made if for dinner. I usually make it very spicy and it goes very well with raitha. Mom makes something similar and I learnt it from her but have made small changes. This recipe tastes good with vegetables as well. But chicken and mutton pulav are my favourite.
I just tried a different way of plating it. Thought of posting the below pic as well :)
Ingredients
Chicken – ¾ Kg
Basmati Rice – 1 ½ cup- Soaked for 20 mins.
Coriander leaves – 1 cup – roughly chopped
Mint leaves – ¼ cup – roughly chopped
Green chillies – 10 - 15
Whole garam masala (cloves – 5, cinnamon – 1 inch,
green cardamoms – 2, bay leaf – 1, Star
anise – 1, Fennel seeds – 1 tsp)
Onion – 1 large – cut lengthwise
Ginger garlic paste – 1 tbsp
Turmeric powder – 1 tsp
Coriander powder – 2 tsp
Garam masala powder – ¾ tsp
Lemon juice – 3 tsp (you can use less)
Oil – 4 tbsp
Salt
Water/Coconut milk - 2 ¼ cup
Method
In a mixer add coriander leaves, mint leaves and
green chillies and grind it into a paste. Keep it aside.
Heat oil in a pressure pan and add whole garam
masala. Once they start spluttering, add onions and sauté till they turn golden
brown. Add the chicken and sauté till the water from the chicken reduces. Add
ginger garlic paste and sauté till the raw smell goes. Add the green paste and
sauté till the oil separates.
Add turmeric powder, coriander powder and garam
masala powder. Mix it well. Add rice, water/coconut milk and salt. Check for
seasoning. Add the lemon juice. Give it a mix. Close the pressure pan and cook
up to 2-3 whistles. Once cooked, let it stand for 10 mins before opening the
cooker. Serve hot with raitha.
My Notes
ü You can cook this rice either in coconut milk or
just plain water. Both taste good. I have tried both the versions.
ü You can modify the amount of oil and spices
according to your taste.
ü The amount of water/coconut milk used here
depends on the type of rice you are using. since I am using basmati rice I am
using in 1:1 ½ ratios. You can use ordinary rice as well.
