Chocolate brownie is a rich and dark chocolate cake which is ideal for a tea party. It can also be served as a dessert with a dollop of vanilla icecream. This sundae is a bit hit in my house. I had this combination first at corner house in bangalore. It is called as Brown Bomb there. Since then it has been my favourite and i was never able to make up my mind to have any other desserts there. Although i have tasted most of the sundaes at corner house Brownie would just not let me go back to any other dessert. I tried my version of brownie and it did come out well.
Ingredients
Refined Flour/ Maida – 1 Cup
Baking powder – 1 ½ tsp
Baking Soda – a pinch
Eggs – 2
Powdered Sugar – ¾ Cup
Salt - a pinch
Oil – ½ Cup
Vanilla Essence- 1 tsp
Milk – ¼ cup
Walnuts – ½ cup chopped
Cooking chocolate – 120 gm
Method

Baking Soda – a pinch
Eggs – 2
Powdered Sugar – ¾ Cup
Salt - a pinch
Oil – ½ Cup
Vanilla Essence- 1 tsp
Milk – ¼ cup
Walnuts – ½ cup chopped
Cooking chocolate – 120 gm
Method
Firstly in a microwave safe bowl add chocolate and oil and microwave
it for a min. Let it melt and become into a fine sauce. Keep it aside
Sieve the flour, baking powder and baking soda two to three times and keep it aside.
In another bowl, add eggs, sugar and salt. Blend it well. Add oil and give it a mix. Mix in vanilla essence, milk and chocolate sauce and mix the mixture using a wooden spoon or a whisk, till well blended. Add the flour little by little and mix it all the while. Add walnuts and mix the mixture well. Do not beat the batter.
Pour the batter into a greased baking dish and bake it in a pre-heated oven at 180 degree C for 40-45 mins or till done (A skewer inserted in it should come out clean). Remove from the oven and leave it to cool on the wire rack.

My Notes
ü
The batter should be only up to 2/3rd
of the baking tin or the cake becomes dense.
ü Use powdered sugar so that it gets blended soon.
ü Keep checking the cake regularly after 35 mins. Different ovens take different time to cook.
