A mousse is a prepared food that incorporates air bubbles to give it a light and airy texture. It can range from light and fluffy to creamy and thick, depending on preparation techniques. Mousse can be made with any fruit of your choice. I have used Kiwi here.Kiwifruit is native to southern China where it has been declared a National Fruit of China



Ingredients

Kiwi  – 1 cup (Pureed)
Sugar – ¼ cup (approx)
Gelatin – 2 ¼ tsp
Whipped Cream – 1 cup
Water as needed


Method

Take a non stick pan and add kiwi pulp. Warm it up. Keep it on min flame. Add sugar and keep stirring till the sugar dissolves completely. If the pulp appears to be too thick just add 1-2 tbsp water.

Meanwhile take gelatine in a microwave safe bowl. Add around 3 tbsp water and leave it to dissolve completely. Once done, heat it in a microwave for 30 secs.

Mix the gelatine liquid to the kiwi mixture and mix it. Take it off the heat and leave it to cool.

Fold in the whipped cream to the kiwi mixture gently. Give it a good mix. Pour it in moulds and let it set in refridgerator. Once it is set decorate it as per your choice and serve chilled.


My Notes

ü  While making kiwi puree, do not run the mixer  for too long or the pulp will become bitter.
