Neer dosa is a dish made out of rice that is very commonly made in south canara region. It is had with different accompaniments. Vegetarians can have it with any chutney of their choice. But non vegetarians in south canara region mostly have it with chicken or fish curry.



Ingredients

Dosa rice – 1 cup
Coconut – 2 tbsp (optional)
Salt
Water as needed
Oil


Method

Soak the rice in enough amount of water for around 4 – 6 hours. Then grind into a fine and thin batter along with coconut. Add some salt and use it immediately. If you want to use it later put the batter in the refrigerator without adding salt.  There is no fermentation needed.

While using the batter take a ladle full of batter and pour it on the hot greased flat griddle (Tava) in a random manner. Just move the Tava in a circular fashion so that the batter spreads evenly. Sprinkle some oil and Cover it with a plate and cook on low-medium flame. Once cooked, the Dosa will start leaving the Tava. Take it out on a plate. Serve hot with chutney or curry of your choice.


My Notes

ü  Coconut is used for extra flavour but you can skip it.

ü  Batter should be thin and hence you will not be able to spread it in the usual manner the way you do it for plain dosas.

ü  It needs to be poured randomly.  Then immediately pick the Tava in your hand and move it in the direction so as to spread the batter evenly.

ü  Flame should be high while pouring the batter so that it sticks to the pan and form dents like structure and then the flame should be reduced while cooking.
