Prawns in Manchurian Gravy

I made sichuan fried rice today and wanted a gravy to with it. I had prawns at home so thought of making manchurian gravy. This combo was wow!!!
Ingredients
Prawns – ½ kg – (Boil it in some
water along with salt until done)
Oil – 2 tbsp
Garlic – 10 – finely chopped
Ginger – 1 inch – grated
Onion – 1 medium – cut into cubes
and layers separated
Red capsicum – ½ small - cut into
cubes
Green Capsicum – ½ small - cut into
cubes
Soya sauce – 1 tbsp
Vinegar – 1 tbsp
Tomato ketchup – 4 tsp
Water – 1 ½ cups
Salt
Corn flour – 2 tbsp (mixed in 2
tbsp water)
Spring onion – for garnishing (I
dint use this)
Method
Heat oil in a wok. Add garlic and
ginger and saute Add onion and toss it. Add red and green capsicum. Toss it
till it is cooked a bit. Do not overcook. The veggies need to be crisp. Add
soya sauce, vinegar and tomato ketchup. Give it a good mix. Add the water and
let it come to a boil. Add salt and check for seasoning. Add the corn flour
mixture and cook till the gravy thickens. Garnish it with spring onion. Serve
hot with any fried rice.
My Notes
ü Chinese cooking is done on high flame so keep
the flame high while cooking. Keep all the ingredients ready before starting to
cook.
