Cooked Rice – 4 cups
Mushrooms – 2 cups – chopped
Egg – 1
Oil – 4 tbsp
Garlic – 1 tsp – finely chopped
Ginger – 1 tsp – finely chopped
Green chillies – 2 – finely chopped
Onion – 1 medium – finely chopped
Spring onion – ½ cup – chopped
Heat oil in a non-stick kadai. Add garlic and ginger and sauté till fragrant. Add green chillies and onion and sauté. Add spring onion and salt. Add egg and sauté till it is completely cooked. Add mushrooms and sauté till the water from mushrooms gets reduced and oil separates. Add cooked rice at this stage and give it a mix. Serve hot.
ü Chinese cooking is always done on high flame. Hence keep all the ingredients handy before starting to cook. Do not reduce the flame at any point. Be quick in adding all the ingredients.
