Ingredients

Mushrooms – 2 cups (slit into four portions)
Oil – 2 tbsp
Garlic – 1 tsp – finely chopped
Ginger – 1 tsp – finely chopped
Dry red chillies – 4 (broken into two parts)
Onion – 1 small– cut into cubes (layers should be separated)
Spring onion – ½ cup + for garnishing - chopped
Soya sauce – 1 tbsp
Oyster sauce – 2 tbsp
Vinegar – 1 tsp
Salt
Corn flour – 3 tbsp (mixed in little water into a fine paste)
Water – 2 cups


Method

Heat oil in a non-stick pan. Add garlic and ginger and saute. Add red chillies and saute till fragrant. Add onion and saute till it turns pink. Add spring onion and saute.  Add soya sauce, oyster sauce, vinegar and salt. Add water and bring the gravy to a boil. Check for seasoning. Add the corn flour paste. The gravy will begin to thicken. Cook for half a min and take it off the heat. Serve hot with any fried rice of your choice.


My Notes

ü     I used one and half packet of mushrooms and chopped the big sized ones into four parts and small ones into two parts.

ü    Adjust the amount of corn flour according to the desired thickness.

ü    Chinese cooking is always done on high flame. Hence keep all the ingredients handy before starting to cook. Do not reduce the flame at any point. Be quick in adding all the ingredients.
